Tofu Popsicles - Healthy Vegan Style Dessert

We try to eat a vegetarian/vegan diet as much as possible, so I cook with tofu quite a bit.  It is a very healthy inexpensive food that can be used in so many recipes. I even have recipes for desserts made with tofu. One of our favorites treats are homemade tofu popsicles. And I promise, these taste much better than they sound. And look.


My kids love these, especially on hot summer days. Now, do I tell my kids they are actually eating something that is healthy for them? And that they are eating tofu? Nope. I keep quiet and simply enjoy watching the kids slurp away on their yummy treats.

Tofu Popsicle Recipe

Ingredients 

2/3 cup soft silken tofu
1 1/3 cups fresh orange juice
2 Tbs sugar
1 tsp vanilla extract

Directions:

 Put all ingredients in a blender and puree until the sugar is dissolved. Then pour the mixture into paper cups or any freezer-pop molds you have handy.

In about an hour, you can place a wooden Popsicle stick into each cup. If the sticks do not stand straight up, take them back out and let the mix freeze another 10-15 minutes and then try again. 

Once the Popsicle sticks are in place, continue freezing the Popsicles until they are completely frozen.

To loosen the mold, run the cup under cool water for a second or two.
