Back To School Breakfasts On The Go


Back to school starts off pretty well at our house...for about the first week or so. My daughter is always excited in the beginning and gets up even before we do and is ready to go by the time we're up. My 1 1/2 year old and 4 year old seem to cooperate too the first week, and for the most part we have smooth mornings with my daughter getting out to school in plenty of time.

But soon, really soon, our 'honeymoon' period is over and hectic mornings set in with my daughter not getting up without me calling her about three times with some threats of various sorts thrown in. Alarm clocks mysteriously stop working, my little ones no longer decide to cooperate, homework goes missing, as do shoes, and the last thing we can think about is breakfast.

But knowing how important breakfast is for everyone, but especially kids heading off to school, I am always on the lookout for easy quick nutritional breakfasts my daughter can eat, even if it's in the car on the way to school. So here are a couple of things that I try and keep around for those mornings that are especially hectic.

Keep baggies filled with nuts, dried fruits, whole grain cereal, and raisins. On even the worst mornings, these are easy to grab and take in the car and at least get a few bites of nutrition before school starts. It is also a good idea to fill a water bottle every night before bed that can be easily grabbed as well as you all head out the door!

Another yummy but quick breakfast idea is to keep sliced bananas, strawberries and blueberries in a sealed plastic bag in the freezer. Grab the bag and let defrost slightly while everyone is getting dressed, looking for homework, shoes, hairbrushes, etc. (you know the drill,lol), and then toss the fruit into the blender, add about 1/2 cup milk, and blend. This will be thick so you may want to serve with a spoon.
