We try to eat a vegetarian/vegan diet as much as possible, so I cook with tofu quite a bit. Tofu is very healthy and cheap and can be used in so many recipes.

I even have recipes for desserts made with tofu. (No, I am not a crazy tofu lady, LOL)

One of our favorite summer treats is homemade tofu popsicles. (WAIT! Don't Leave!!)

I promise these taste much better than they sound. (Pinky Promise!)

Now, do I tell my kids they are actually eating something that is healthy for them? And that they are eating frozen tofu on a popsicle stick?

Nope. I keep quiet and simply enjoy watching the kids slurp away on their yummy treats. (there are just some things that do not need to be shared.)

If you want to stay away from everything Tofu, try these homemade frozen yogurts pops, they are equally deliciousđŸ˜‰

So, if you have stuck with me this far, here is the recipe!

How to Make Tofu Popsicles

2/3 cup soft silken tofu
1 1/3 cups fresh orange juice
2 Tbs sugar
1 tsp vanilla extract
popsicle sticks

Put all ingredients in a blender and puree until the sugar is dissolved. Then pour the mixture into paper cups or any freezer-pop molds you have handy.

In about an hour, you can place a wooden Popsicle stick into each cup. If the sticks do not stand straight up, take them back out and let the mix freeze another 10-15 minutes and then try again.

Once the Popsicle sticks are in place, continue freezing the Popsicles until they are completely frozen. To loosen the mold, run the cup under cool water for a second or two.

So tell me, do you think you might try this frozen tofu dessert with your family?
