Refreshing Vegan Tofu Popsicles

Vegan tofu popsicles make perfect healthy snacks for toddlers and preschoolers.

And I promise they taste much better than they sound.

Now, do I tell my kids they are actually eating something that is healthy for them? And that they are eating frozen tofu on a popsicle stick?

Nope. They enjoy them. They are eating healthy. All is good.

(There are just some things that do not need to be shared.)

If you want to stay away from everything Tofu, try these homemade frozen yogurts pops, they are equally delicious, though not vegan😉

 Vegan Popsicles Recipe

Ingredients

  • 2/3 cup soft silken tofu
  • 1 1/3 cups fresh orange juice
  • 2 Tbs sugar
  • 1 tsp vanilla extract
  • popsicle sticks

Put all of the ingredients in a blender and puree until the sugar is dissolved. You can use paper cups for popsicle molds or any freezer pop molds you have handy.

Place popsicle molds on the freezer for about an hour.

Insert a wooden popsicle stick into each cup.

If the sticks do not stand straight up, take them back out and let the mix freeze another 10-15 minutes and then try again.

Once the popsicle sticks are in place, continue freezing the popsicles until they are completely frozen.

To loosen the mold, run the cup under cool water for a second or two.
