  • Whole Wheat flour may make pumpkin bread heavier and denser. If possible, swap with white whole wheat flour, which also has fiber.

  • You can also use almond flour and oat flour. Just be sure to follow the suggested flour each recipe calls for because wheat flour and almond flour may act differently in some recipes.

  • If your pumpkin bread is gummy, you may need to bake it longer. Pumpkin bread should bake until it has an internal temperature of 190 degrees. You can use a cooking thermometer or use a toothpick or fork to insert in the bread to see if it comes out clean without any batter stuck on it. 

  • If you think the bread needs more baking time, but the top and sides are looking like they may burn, cover with foil while the quick bread continues to cook.

  • Use canned Pumpkin Puree, not Pumpkin Pie Filling. The canned pumpkin pie filling is for baking pies and has sweeteners, milk, and spices. So more calories and sugars than you need or want. 

  • Over-mixing the batter can make pumpkin bread too chewy. Just mix until all ingredients are blended

How To Store Pumpkin Bread - Can I Freeze Pumpkin Bread?

  • You can store pumpkin bread covered on your kitchen counter for about 5 days.

  • You can also freeze pumpkin bread in the freezer. Cover the pre-cut slices with heavy-duty foil and place them in an air-tight container or freezer bag. When you are ready to enjoy, let the pumpkin bread thaw at room temperature.
