It just isn't Autumn without the scent of warm pumpkin spice in the air. And baking pumpkin recipes (these vegan pumpkin oatmeal cookies are one of my kids' favorite snacks, and these homemade pumpkin treats for our dogs make the house smell so good!!) is one of the best ways to fill your home with pumpkin spice.

Fall is like the official welcome to baking season and as such, dieting kind of goes out the window. For me, anyway.

But if there are ways to bake a little healthier, who wouldn't love that??  Recipes that swap out calories, sugars, and fats with healthier options are always worth trying.

And if a favorite pumpkin recipe keeps everyone in the family happy, and with a few changes it becomes a healthier pumpkin recipe, no one else needs to know that, right?

Enjoy any of these delicious savory pumpkin bread recipes with some fresh fruit and coffee or tea in the morning or as an afternoon snack with milk, or anytime (make extra and freeze some for later too!)

Pumpkin Bread Baking Tips

  • Whole Wheat flour may make pumpkin bread heavier and denser. If possible, swap with white whole wheat flour, which also has fiber.

  • You can also use almond flour and oat flour. Just be sure to follow the suggested flour each recipe calls for because wheat flour and almond flour may act differently in some recipes.

  • If your pumpkin bread is gummy, you may need to bake it longer. Pumpkin bread should bake until it has an internal temperature of 190 degrees. You can use a cooking thermometer or use a toothpick or fork to insert in the bread to see if it comes out clean without any batter stuck on it.

  • If you think the bread needs more baking time, but the top and sides are looking like they may burn, cover with foil while the quick bread continues to cook.

  • Use canned Pumpkin Puree, not Pumpkin Pie Filling. The canned pumpkin pie filling is for baking pies and has sweeteners, milk, and spices. So more calories and sugars than you need or want.

  • Over-mixing the batter can make pumpkin bread too chewy. Just mix until all ingredients are blended

How To Store Pumpkin Bread - Can I Freeze Pumpkin Bread?

  • You can store pumpkin bread covered on your kitchen counter for about 5 days.

  • You can also freeze pumpkin bread in the freezer. Cover the pre-cut slices with heavy-duty foil and place them in an air-tight container or freezer bag. When you are ready to enjoy, let the pumpkin bread thaw at room temperature.
